Vegan Waffles is one of the most favored of recent trending foods on earth. It’s easy, it is fast, it tastes yummy. It’s enjoyed by millions daily. Vegan Waffles is something that I have loved my whole life. They’re fine and they look fantastic.

Preheat your waffle iron / machine. Mix the flour, baking powder and sugar in a large jug or bowl. In a separate bowl, mix the plant milk, vegan yoghurt and vanilla extract. When the waffle iron is hot, tip the wet ingredients into the dry ingredients and mix until smooth.

Combine all ingredients for the vegan waffles in a medium bowl. Using a hand whisk, stir well until all lumps are removed. The batter will be quite thin. Mix the nut milk, vanilla extract and the lemon juice or ACV together in a small bowl/measuring cup.

Instructions to make Vegan Waffles:
  1. Make the “egg” by combining the warm water and ener(g) together. In a separate bowl add milk and vinegar. Set aside.
  2. Melt the coconut oil.
  3. In a separate bowl mix flour, baking powder, salt, and sugar
  4. Combine all the wet ingredients and pour into the dry ingredients. Do NOT overmix!!!
  5. Spray or lightly brush oil in preheated waffle iron.
  6. Scoop waffle batter onto the iron. I use a 4 oz ice cream scoop.
  7. Cook until golden brown and serve!
  8. Alternatively. Allow it to thoroughly cool on a wire rack and wrap in heavy duty tin foil and freeze. When ready to eat, pop it in the oven with tinfoil and allow it to heat thoroughly at 375 degrees for 10 minutes. This allows it to keep the moisture in while crisping it back up again!

The sifting really helps to make the waffles fluffy.
