The ingredients needed to make Mushroom Soup:
  1. Make ready 25 grams dried porcini mushrooms
  2. Prepare 500 ml vegetable stock
  3. Prepare 60 grams exotic mushrooms
  4. Get 2 shallots, diced finely
  5. Get 3 garlic cloves, crushed
  6. Make ready 1 tbsp double concentrate tomato puree
  7. Prepare 1 carrot, use a peeler to peel into ribbons

  9. Make ready 1 grams fresh coriander, finely chopped

Place the porcini in a small dish, add boiling water just to cover, and leave to soak. Get a large casserole-type pan nice and hot, then add a good couple of lugs of olive oil and your fresh mushrooms. Stir around very quickly for a minute, then add your garlic, onion and thyme and a small amount of seasoning. Melt the butter with the olive oil in a frying pan and fry the onion and garlic until soft.

Steps to make Mushroom Soup:
  1. Soak the porcini in 250ml of boiling water for 25mins. Then separate the stock and mushrooms. Keep the stock and chop the porcini.
  2. Melt the butter in a pan on a medium to low heat.
  3. Add the shallots, garlic and carrots to the pan and cook gently for 2-3mins.
  4. Add the coriander and all the mushrooms, cooking for another 2-3mins.
  5. Use a little bit of the vegetable stock to deglaze the pan. Then add in the porcini stock, tomato puree and vegetable stock. Season then bring up heat until the liquid begins to bubble.
  6. Cook for about 30-35mins on a low heat.

Stir around very quickly for a minute, then add your garlic, onion and thyme and a small amount of seasoning. Melt the butter with the olive oil in a frying pan and fry the onion and garlic until soft. Add the mushroom and cook until soft, then season well with salt and freshly ground black pepper. Heat a splash of olive oil in a large saucepan over a medium heat, add the onion, celery, garlic, parsley stalks, thyme leaves and mushrooms, pop the lid on and cook gently until softened. This delicious soup is quick and easy to make.
