  3. Remove the mushrooms from the pan but don't throw the water away just yet.
  4. If you have any whole mushrooms, keep them aside for the moment. Put the rest into a blender along with a cup of the water you used to cook the mushrooms. If you're using cream, add it in and blend until smooth. Add more water if required until you get the consistency you like.
  5. Pour into serving bowls and add whole mushrooms if any.

Melt the butter with the olive oil in a frying pan and fry the onion and garlic until soft. Add the mushroom and cook until soft, then season well with salt and freshly ground black pepper. Heat a splash of olive oil in a large saucepan over a medium heat, add the onion, celery, garlic, parsley stalks, thyme leaves and mushrooms, pop the lid on and cook gently until softened.
