- Get 3⁄4 tbsp cognac or brandy ( optional)

- Add the parsley, you can use dried (but only use half the amount ) and cream if using and season with salt and the pepper
- Add the cognac if using stir into soup Serve.
Sprinkle over the flour and stir to combine. Cover with a plate on top and set aside. In a large wok or soup pot, drizzle in e.v.o. oil, enough to cover the bottom of the pan or pot. Toss in onions and garlic and cook till softened. This delicious soup is quick and easy to make.
