  10. Add everything back into roasting pan for approximately 10-15 minutes.

Add the thyme and rosemary sprigs in. Remove from oven, add carrots and potatoes to pot and season with salt and pepper. Heat a dutch oven over high heat until very hot. Remove from heat and heavily spray with vegetable oil spray. Heat the olive oil in a Dutch oven or large saucepan; add the pot roast and brown on all sides.
