This is a hand-me-down basic braised lamb recipe from my mom. Mom gave no measurement for the ingredients as it depends on the amount of meat used and water is added based on that. Her braised meat recipe can be prepared two ways. One is using a big chunk of meat, that is cooked until tender and sliced afterward, then served with sauce as main or side dish.

  1. Take A. 1.8-2kg lamb meat
  2. Get B. Sauces and Seasoning

Add the onion and garlic and gently fry with the thyme and bay leaves. Combine the broth, soy sauce, brown sugar, garlic and mustard; pour over meat. Rub the shoulder of lamb with a little olive oil and season with salt and pepper. Place a little more olive oil into the bottom of a large casserole pot with the onions, garlic and thyme, sit the lamb on top.

Steps to make Basic Braised Lamb:
  1. A - Get all ingredients ready. Place meat in a pot. Pour enough water to cover the meat and over medium heat, bring it to a near boil. Transfer to a colander, drain water and wash meat to remove any grime and impurities. Return meat to a big stock pot or deep pan. Set aside.
  2. B - Combine dark and sweet soy sauce in a bowl. Mix well. Start with 13 cup of dark soy sauce and 14 cup of sweet soy sauce. Add 12 cup of water and mix well. It should taste sweet and salty. Pour this mixture into A (meat pot/pan). Liquid should barely cover the meat (or much lesser).
  3. C - Add everything in C to the pot. Cover the pot or pan. Cook over high heat and bring to a boil. Stir. Turn the heat down and low simmer until liquid is thicken or reduced to more than half and meat is tender. Serve white hot rice. Reheat left over before serving.
  4. Note: Adjust cooking time accordingly. If liquid is reduced/thicken but the meat is still tough, add 13 cup of water and a tablespoon each of dark and sweet soy sauce. Keep cooking until meat is tender and liquid is greatly reduced.

Rub the shoulder of lamb with a little olive oil and season with salt and pepper. Place a little more olive oil into the bottom of a large casserole pot with the onions, garlic and thyme, sit the lamb on top. Braising is the best way to prepare lamb shanks, which can turn stringy when cooked too quickly. Put carrots and onions in a casserole dish. Pour the water in the dish and add stock pots.
