- Prepare 500 g diced stewing beef

- Get 3-4 tablespoons olive oil
- Get Salt and pepper to taste
- Prepare Dumplings
- Get 100 g Self- raising flour
- Take 50 g vegetarian suet
- Prepare 1⁄4 teaspoon salt
- Make ready 5-6 tablespoons cold water
Sift the flour into a large bowl and stir in the suet, parsley and lots of seasoning. Make the dumplings by sieving the flour into a bowl, stir in the suet or rub in the margarine. Add the herbs, salt and pepper and mix to a smooth, elastic dough with the milk. Using a casserole (Dutch oven), heat the oil and sear both sides of the lamb until nicely browned.
Instructions to make Casserole with dumplings:
- Hear olive oil in a frying pan and brown the meat for 5 minutes
- Add chopped onion, minced garlic,chilli and mixed herbs and cook for a further 2-3 minutes.
- Remove from heat and add to a casserole dish or deep oven-safe pan. Add vegetables and stock. Stir and cover. Place in oven at 150 degrees centigrade and cook for at least 3 hours.
- Make dumplings - combine self-raising flour, suet, pinch of salt, and enough cold water to make a dough (about 5 tablespoons). Divide into 8 and shape into balls.
- After 3 hours remove casserole from the oven, add the dumplings, replace lid and cook for a further 30 minutes. Remove lid and cook for s further 10 minutes (this crisps the outside of the dumplings).
- Serve as is, or with chopped parsley garnish and green beans.
Add the herbs, salt and pepper and mix to a smooth, elastic dough with the milk. Using a casserole (Dutch oven), heat the oil and sear both sides of the lamb until nicely browned. Then remove the lamb back to the plate with flour and turn off the heat. Put a layer of potatoes, carrot and onion on the bottom of the casserole and cover with the lamb pieces and any remaining flour. Ingredients and method may vary slightly on live TV show.
