Beef Enchiladas

The ingredients needed to make Beef Enchiladas:
  1. Prepare 1 lb ground beef
  2. Get 1 Medium onion diced
  3. Take 2 cans red enchilada sauce
  4. Prepare 8 flour tortillas
  5. Take 3 cups shredded Mexican cheese

Stir in water and taco seasoning. Add a tablespoon of cheese and roll the tortillas closed. Place the filled tortillas, seam-side down, on the prepared baking dish. Brown meat and onions in large skillet.

Steps to make Beef Enchiladas:
  1. Brown ground beef and onions seasoned with salt and pepper and drain.
  2. Put 12 can of enchilada sauce in the bottom of a 13 X 9 baking dish.
  3. Mix the other half of enchilada sauce with ground beef mixture and add 1 12 cups shredded Mexican cheese.
  4. Place small amount of ground beef mixture in each tortilla shell and roll up. Place each one in the baking dish
  5. Top with 1 can red enchilada sauce and the remaining cheese.
  6. Bake uncovered at 350° for 20 minutes. Garnish with diced tomatoes, lettuce and sour cream

Simple ones, filled with a plain cooked beef filling then topped with enchilada sauce and (lots of) cheese. Fancy ones with the addition of chillies, beans, corn and even olives, sometimes even bacon.
