Transfer the steaks to a cutting board and let them rest for a few minutes. In a large bowl, combine the sherry, soy sauce, soup mix and brown sugar. Whisk brown sugar, soy sauce, pineapple juice, water, vegetable oil, and garlic together in a large bowl; drop beef slices into the mixture and stir to coat.
