- Boil beef for an hour add peppercorns.Don't throw the stock, can use it later. When beef is tender. Ready the wok heat it and add oil. Saute onion and beef. Then pour oyster sauce and tomato sauce.Pour some beef stock. Simmer it

Add beef back to dutch oven then add broth, wine, Worcestershire sauce, thyme, and bay leaves. Bring to a boil then reduce heat to a simmer. Add beef, a few pieces at a time, and toss to coat.
