- Notes: My jerky gun came with 2 tips. 1 for making thin jerky and a dual tip for making thicker ones. I used the thicker tip for this recipe. If you wish to make the thinner kind, you will need to adjust the dehydrating times accordingly.
I love the eye of round because it has minimal marbling (fat) and the cut makes jerky that. Other people have said why this is a great beef jerky and they are correct. This jerky comes from an old mom/pop recipe and it also utilizes all top round which is a whole, relatively expensive cut of beef. You won't find a bunch of gristly pieces you have to chew around and then wonder what part of the animal you just ate. The meat should be slightly pliable without breaking when you bend it in half.
